What does it mean to add sour milk to a recipe?

This does not mean to add that stuff that has curdled at the back of your refrigerator. To “sour” milk, add 1 tablespoon vinegar or lemon juice to 1 cup milk, minus 1 tablespoon. Stir and let stand 5 minutes.
