Celebrate the new year with our New Year’s Day Sauerkraut! For generations, sauerkraut has been a traditional New Year’s Day meal, said to bring prosperity and good luck. We love this delightful twist on a classic, awarding it third place in our 2024 Recipe Contest.

Ingredients
5 slices bacon, chopped
1 medium onion, chopped
2 tablespoons (1/4 stick) butter
1 medium potato, peeled and shredded
2 small Granny Smith apples, peeled, cored, and chopped
1 clove garlic, chopped
2 tablespoons brown sugar
1/2 teaspoon celery salt
1/2 teaspoon freshly ground black pepper
16 ounces sauerkraut, drained
1/2 to 1 cup chicken stock
fresh chopped parsley, for garnish
Instructions
  1. In a large pan over medium heat, cook bacon until just turning brown. Add onions and continue to cook for 3 minutes. 
  2. Add butter, potatoes, and apples. Cook for 10 minutes. 
  3. Add garlic, brown sugar, celery salt, and pepper. Reduce heat to medium-low.
  4.  Stir in sauerkraut. Add ½ cup of chicken stock, bring to a simmer, cover, and cook for 10 minutes. Add more stock if sauerkraut gets dry. 
  5. Uncover, stir well, remove from heat, and allow to cool. Serve garnished with parsley.
