Marrow is basically a fat so it should just melt and run out of the bone eventually unless it is a whole bone that hasn’t been cut. It depends on how big the bone is and how long you cook it as to whether it all melts out or not.
You can also scoop out raw marrow, melt it in a skillet and use that to brown your meat in instead of oil. It’s really flavorful!
